
Ingredients:
• apples – 2 (350 gm approx)
• golden Raisins – 1/2 cup
• oil – 1/4 cup
• Onion 1, medium size
• Garlic – 6 to 8 flakes
• Cinnamon – 1 stick
• Lemon grass – 1 piece, 5 cm long
• chilli powder – one and a half tsp
• curry powder – one and a half tsp
• Tomato puree – 2 tbsp
• water – 1/4 cup
• Coconut Milk – 1/2 cup
• salt to taste
Method:
- Peel and core apples.
- Cut into 2 cm cubes.
- Grind onion and garlic to a paste with oil.
- Heat a non-stick fry pan and fry the ground paste till light brown.
- Add chilli powder, curry powder, lemon grass and cinnamon and fry 1 minute.
- Add tomato puree, water, apples and raisin.
- Add salt to taste.
- Cover and cook on low flame till apples are slightly soft.
- Add coconut milk and cook for 2 more minutes.
- Serve hot with steamed rice.
