Ingredients
– 2 apples
– 1 medium size fennel bulb, chopped
– 1 sliced shallot
– 2 cup vegetable broth
– ? cup dry white wine
– 1 ? cup cream
– 1 teaspoon Dijon mustard
– 1 chopped sweet onion
– 1 tablespoon lemon juice
– ? teaspoon ground ginger
– ? teaspoon dried tarragon
– ? teaspoon dried thyme
– ? teaspoon fine sea salt
– Pepper to taste
– ? cup roasted pumpkin seeds
How To Cook?
1. Peel the apples and put them into sauce pan over MEDIUM heat. Now, add fennel and onion and cook it for 10 minutes.
2. Stir in broth, 1 cup water, shallot, celery, wine, salt, pepper, ginger, tarragon, apples, thyme and let it boil over HIGH heat or for 20 minutes, until all are tender.
3. Reduce the heat and simmer for 25 minutes or until the fruits are completely tender. Stirring occasionally.
4. Now, transfer the soup to blender and puree it until it becomes smooth.
5. Whisk in lemon juice, cream and mustard.
6. Serve the soups into bowls.
