
Ingredients:
• 1 Egg
• 1/2 cup – Orange juice
• 1 cup – dried apricots, chopped
• 1/4 cup – Brown sugar
• 1 cup – Oat bran
• 1/4 cup – Wheat germ
• 3/4 cup – whole-wheat flour
• 2 tsp – baking powder
• 2 tbsp – Sunflower oil
• margarine
Method:
- Preheat oven to 400 degrees F.
- Grease a 12-cup muffin tin with margarine.
- In a small saucepan, heat orange juice until boiling.
- Mix in apricots and brown sugar.
- Remove saucepan from heat and cool apricot mixture slightly.
- In a medium bowl, combine oat bran, wheat germ, whole-wheat flour, and baking powder; set aside.
- In a mixing bowl, beat together sunflower oil, skim milk, and egg.
- Add dry ingredients and apricot-orange juice mixture to milk mixture, and mix until just moistened.
- Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
