Ingredients:

• 1 cup – chopped arugula/ rocket leaves
• 1 cup – chopped Spinach leaves
• 1 – large Onion chopped
• 3 – Green chillies chopped
• Salt to taste
• 1 tbsp – oil
• 1 – sprig Curry leaves
• 2 tbsp – grated Coconut
• 1/2 tsp – mustard seeds.

Method:

  1. Heat oil in a pan and add the mustard seeds.
  2. When they begin to splutter add the onions, green chillies and curry leaves and fry till the onions are slightly brown.
  3. Toss in the greens.
  4. Add salt and coconut.
  5. Cover and cook for a few minutes till all the water dries.
