
Ingredients:
• 1 cup – chopped arugula/ rocket leaves
• 1 cup – chopped Spinach leaves
• 1 – large Onion chopped
• 3 – Green chillies chopped
• Salt to taste
• 1 tbsp – oil
• 1 – sprig Curry leaves
• 2 tbsp – grated Coconut
• 1/2 tsp – mustard seeds.
Method:
- Heat oil in a pan and add the mustard seeds.
- When they begin to splutter add the onions, green chillies and curry leaves and fry till the onions are slightly brown.
- Toss in the greens.
- Add salt and coconut.
- Cover and cook for a few minutes till all the water dries.
