Ingredients:
• ash gourd, peeled and cubed – ¾ kg.
• Coconut – ½, grated.
• Red Chillies 8.
• Coriander seeds – 2 tsp.
• raw Rice – 2 tsp.
• cumin – 1 tsp.
• Bengal Gram (chana) dal – 1 tsp.
• black gram (urad) dal – 1 tsp.
• Fenugreek – ¼ tsp.
• white sesame seeds – 1 tsp.
• Tamarind size of lime.
• Jaggery powder – 1 tbsp.
• oil – 2 tbsp.
• mustard – 1 tsp.
• Curry leaves few.
• salt to taste.
Method:
- Peel and cut ash gourd into big pieces.
- Boil with salt and green chillies.
- Soak tamarind in water and extract juice.
- Roast coconut with little oil till almost black.
- Roast rest of the ingredients till dark brown.
- Grind all together to a coarse paste.
- Add to tamarind juice to gourd.
- Simmer for 3-4 mins.
- Add masala paste and jaggery.
- Simmer for few more minutes.
- Prepare seasoning with oil, mustard and curry leaves and add.
- Serve with steamed rice.
