Ingredients:
• 1/2 kg – Aubergine
• 2 – Drumsticks
• 1 tbsp – oil
• 1/2 tsp – Mustard Seeds
• Handful of Curry leaves
• 1/4 tsp – grated Coconut
• 1/4 tsp – Turmeric powder
• 1/4 tsp Fenugreek seeds
• 4-6 – Red Chillies
• 1 tsp – Coriander seeds
• 1 tsp – Tamarind paste
Method:
- Cut brinjals into broad pieces.
- Cut drumsticks into 4 cms long pieces.
- Season mustard and curry leaves in oil and cook the drumstick pieces.
- Add brinjal pieces, salt and cook till they become tender.
- Grind coconut gratings, turmeric powder, chillies and tamarind together into a coarse paste.
- Add roasted fenugreek and coriander seeds and grind further to make a smooth mixture.
- Add this mixture to the cooked vegetables with some water. Mix well and bring to a boil.
- Simmer for 5 mins and serve hot with rice.
