Ingredients:

• Coconut – 1/2 – grated
• Cumin – 3 tbsp
• Green chillies – 10
• Curry leaves – a few
• Seasoning:
• Coconut oil – 2 tbsp
• Mustard Seeds – 3 tbsp
• Curry leaves – a few
• Vegetables:
• Pumpkin – 1 cup
• Beans – 1 cup
• Carrot – 1 cup
• Potato – 1 cup
• Drumstick – 1
• Curd – 3 cups
• Salt to taste

Method:

  1. Cut all the vegetables into long thin pieces and cook them with 2 tbsp of salt in a pressure cooker.
  2. Grind coconut, green chillies, cumin and curry leaves and keep aside.
  3. Heat the oil in a deep frying pan and add seasoning items.
  4. Add boiled vegetables and ground coconut mixture, and boil for 5 mins.
  5. Add curd and boil for 5-10 mins in medium flame.
  6. Serve
