
Ingredients:
• 2 cups – Milk
• 200 g – mushroom, sliced
• 1 cup – potatoes, peeled and chopped
• 2 – avocado, peeled and sliced
• 2 tbsp – Butter
• 1/2 cup – onion, chopped
• 1/2 cup – Cream
• 6 cups – water/stock
• 2 tbsp – Mint leaves
• salt and pepper to taste
Method:
- Melt the butter in a skillet.
- Add onion and fry till softened.
- Add potato, avocado, mint and 4 cups of water or stock.
- Let it simmer till the vegetables are cooked.
- Cool and blend
- Combine mushrooms with remaining water or stock.
- Allow it to simmer for 2-3 minutes.
- Add the blended mixture, salt, pepper and milk.
- Heat thoroughly and serve garnished with cream.
