Ingredients:

• 1 bunch – Spinach
• 1 – Avocado, de-seeded
• 1 tbsp- Tamarind pulp
• 1 – Onion, chopped
• 1 tbsp – Ginger, grated
• 1 tsp – Lime juice
• 1 tsp – Sesame oil
• 1 tsp – Mustard and cumin
• Salt to taste

Method:

  1. Chop spinach and keep aside. Mash avocado and keep aside.
  2. Heat oil in a frying pan. Splutter mustard and cumin.
  3. Add green chilles, ginger, onion and saute. Add spinach. Cook till it wilts. Add tamarind pulp and stir well.
  4. Take off heat and allow to cool. Blend the spinach and avocado well. Add salt as per taste.
  5. Serve with roti or parathas.
