Ingredients:
• 1 bunch – spinach, cleaned and chopped
• 1 – avocado, deseeded
• 1- green tomato, chopped
• 1 – onion, chopped
• 1 tbsp – ginger, grated
• 1 tsp – Lime juice
• 1 tsp – oil
• 1 tsp – mustard and cumin
• salt
Method:
- Add lime juice to the deseeded avocado, mash well and keep aside.
- In a kadai heat oil and add mustard and cumin. Once mustard pops, keep one portion of this seasoning aside and add green chillies and onions to the kadai.
- Fry till onions turn golden brown.
- Now add chopped tomatoes and spinach; mix well till they become slightly soft.
- Add the grated ginger and turn off the stove.
- After this cools down, blend well with mashed avocado and salt.
- Add the seasoning kept aside before serving.
- Can be served with any bread, roti, rice or dosa
