Ingredients:

• 1 bunch – spinach, cleaned and chopped
• 1 – avocado, deseeded
• 1- green tomato, chopped
• 1 – onion, chopped
• 1 tbsp – ginger, grated
• 1 tsp – Lime juice
• 1 tsp – oil
• 1 tsp – mustard and cumin
• salt

Method:

  1. Add lime juice to the deseeded avocado, mash well and keep aside.
  2. In a kadai heat oil and add mustard and cumin. Once mustard pops, keep one portion of this seasoning aside and add green chillies and onions to the kadai.
  3. Fry till onions turn golden brown.
  4. Now add chopped tomatoes and spinach; mix well till they become slightly soft.
  5. Add the grated ginger and turn off the stove.
  6. After this cools down, blend well with mashed avocado and salt.
  7. Add the seasoning kept aside before serving.
  8. Can be served with any bread, roti, rice or dosa
