Ingredients:

• 2 – brinjals, medium size
• 2 – onions, medium size
• 2 – Tomatoes
• 1/2 tbsp – Dhania powder
• 1/2 tbsp – Aamchur
• 1/2 tbsp – Red Chilli powder
• 1/2 tbsp – salt

Method:

  1. Cut the brinjals into 2 halves lengthwise and fry them till they are a little red. Keep them aside
  2. For the masala:
  3. Heat 2 tbsp of oil in a pan and put all the above ingredients in the pan, except the brinjal, and cook it till done.
  4. Take a baking dish, arrange brinjal in it and pour the masala over it. Bake it for 25 mins at 350 degrees F.
