Ingredients:

• 1 – large Eggplant
• 1 – Egg
• 1/4 cup – Milk
• 1.5 cup – Chick pea flour
• 2 tbsp – Cilantro, chopped
• 1/2 cup – Whole Wheat flour
• 1 cup – Water,
• 1/2 tbsp – Cumin, preferably ground
• 1/4 tbsp – Ginger freshly cut
• 1 tsp – chilli powder
• Salt to taste
• 1 tsp – black pepper powder

Method:

  1. Add milk to the egg and beat it well.
  2. Now mix the beaten egg, the chick pea flour and the whole wheat flour, cumin, ginger and enough water to make a thick batter.
  3. Add the red chilli powder, cilantro, salt and black pepper powder to it. Mix well.
  4. Now cut the eggplant vertically into 1/4 inch thin slices.
  5. Soak these slices in the batter for 10 mins.
  6. Heat the oil in the pan till its really hot. Deep fry the fritters until light brown.
  7. Drain and serve hot.
