
Ingredients:
• 1 – large Eggplant
• 1 – Egg
• 1/4 cup – Milk
• 1.5 cup – Chick pea flour
• 2 tbsp – Cilantro, chopped
• 1/2 cup – Whole Wheat flour
• 1 cup – Water,
• 1/2 tbsp – Cumin, preferably ground
• 1/4 tbsp – Ginger freshly cut
• 1 tsp – chilli powder
• Salt to taste
• 1 tsp – black pepper powder
Method:
- Add milk to the egg and beat it well.
- Now mix the beaten egg, the chick pea flour and the whole wheat flour, cumin, ginger and enough water to make a thick batter.
- Add the red chilli powder, cilantro, salt and black pepper powder to it. Mix well.
- Now cut the eggplant vertically into 1/4 inch thin slices.
- Soak these slices in the batter for 10 mins.
- Heat the oil in the pan till its really hot. Deep fry the fritters until light brown.
- Drain and serve hot.
