Ingredients:

• 2 cups – kamut Pasta spirals
• 10 to 15 – asparagus, stems chopped
• 1 cup – cherry tomatoes, halved
• 2 to 3 – scallions, chopped
• 1 to 2 tbsp – Garlic oil
• 1/4 cup – Pine Nuts
• Salt to taste

Method:

  1. In a zip lock bag, place the asparagus along with garlic oil.
  2. Zip and shake it so that the asparagus is coated with oil.
  3. Bake the asparagus by placing them in a baking sheet at 400 Fahrenheit for about 10 to 15 mins.
  4. Meanwhile, cook the pasta according to package instructions.
  5. Toast the pine nuts in a skillet.
  6. Once toasted, add the cherry tomato halves along with spring onion whites.
  7. Stir fry for 2 mins, add the cooked and drained pasta along with baked asparagus.
  8. Give it a quick stir, add a little pasta water if desired.
  9. Garnish with grated parmesan.
