
Ingredients:
• 2.5 cups green peas, shelled
• 2 eggs, beaten stiffly
• 2 tbsp – grated Onion
• 2 tbsp – melted Butter
• 1 tbsp – chopped Parsley
• 2 tbsp – finely chopped Mint leaves
• A few drops of red pepper sauce
• Salt, pepper and mustard to taste
Method:
- Boil the green peas till tender, drain and liquidize.
- Add the beaten egg yolks, grated onion, melted butter, chopped parsley, finely chopped mint leaves, drops of red pepper sauce, salt, pepper and mustard to taste.
- Fold in the egg whites, stiffly beaten.
- Pour into a greased ring mould
- Bake at 180 deg C for about 25 mins. Till firm. Turn out after 5 mins.
- Serve with creamed mushrooms.
