Ingredients:

• 10 oz – rigatoni Pasta
• 2 cups – fresh marinara sauce
• 1 cup – mozzarella cheese
• 1/2 cup – parmesan cheese
• 1/2 cup – capsicum, finely diced
• 2 tsp – dried Thyme leaves
• 2 tsp – dried Basil leaves
• 1 tbsp – Olive oil

Method:

  1. Cook the rigatoni according to package instructions.
  2. Heat 1 tbsp olive oil. Add chopped capsicum and cook until slightly tender.
  3. Preheat oven to 375 degree Fahrenheit.
  4. Grease a square or rectangular baking dish or spray with non-stick cooking spray.
  5. Layer the cooked pasta in the dish, top it with sauteed capsicum, and gently pour the marinara sauce over it.
  6. Top with parmesan and mozzarella cheese.
  7. Sprinkle dried basil and thyme leaves.
  8. Bake at 375 degrees Fahrenheit for about 20-25 mins until the pasta and sauce is cooked well and the cheese begins to melt.
  9. Change the setting to Broil and cook for another 2 mins, just so the cheese on the top turns golden.
  10. Remove from oven and cool.
  11. Serve hot with garlic bread.
