
Ingredients:
• 10 oz – rigatoni Pasta
• 2 cups – fresh marinara sauce
• 1 cup – mozzarella cheese
• 1/2 cup – parmesan cheese
• 1/2 cup – capsicum, finely diced
• 2 tsp – dried Thyme leaves
• 2 tsp – dried Basil leaves
• 1 tbsp – Olive oil
Method:
- Cook the rigatoni according to package instructions.
- Heat 1 tbsp olive oil. Add chopped capsicum and cook until slightly tender.
- Preheat oven to 375 degree Fahrenheit.
- Grease a square or rectangular baking dish or spray with non-stick cooking spray.
- Layer the cooked pasta in the dish, top it with sauteed capsicum, and gently pour the marinara sauce over it.
- Top with parmesan and mozzarella cheese.
- Sprinkle dried basil and thyme leaves.
- Bake at 375 degrees Fahrenheit for about 20-25 mins until the pasta and sauce is cooked well and the cheese begins to melt.
- Change the setting to Broil and cook for another 2 mins, just so the cheese on the top turns golden.
- Remove from oven and cool.
- Serve hot with garlic bread.
