
Ingredients:
• 3 – Carrots, scraped and cut into thick wedges
• 1 cup – Cauliflower florets
• 3 – Potatoes, peeled and cut into wedges
• 1 cup – Green peas
• 2 – Capsicums, deseeded and cut into large pieces.
• 1 cup – Sweet Corn
• 2 – Onions, chopped roughly
• 1 tbsp – Vinegar
• 1 tbsp – Lime juice
• 1 tbsp – Sugar
• 2 tbsp – Ground pepper/pepper powder
• 2 tbsp – Grated cheese
• 2 tbsp – Oil
• Salt to taste
• 100 g – Cottage cheese/ Paneer cut into pieces
Method:
- Boil the carrots, cauliflower, peas, corn and potatoes in a little water for a few minutes.
- Drain and then mix all the above ingredients together in a bowl.
- Transfer to a baking dish.
- Bake in a moderate oven for about 45 minutes till the vegetables are brown and tender.
