Ingredients:

• 1 – Beetroot
• 1 – small onion, chopped
• 1 – small tomato, chopped
• 1 – small potato, peeled and chopped
• 1 tsp – Sugar
• Salt to taste
• 1 tsp – ground pepper
• 1 tsp – chopped Mint leaves
• 1 tbsp – chopped coriander leaves.

Method:

  1. Peel, wash and cut the beetroot into large chunks.
  2. Pressure cook the beetroot, onion, tomato, mint and potato till soft.
  3. Cool and keep aside.
  4. When cold, blend in mixie or food processor and strain.
  5. Add salt and pepper.
  6. Garnish with coriander leaves.
  7. Server hot with dinner rolls.
