Ingredients:

• 1 large – Beetroot
• 1 – Onion
• 1 tsp – coriander powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – Urad Dal
• 1/2 tsp – oil
• 1 tbsp – chopped coriander

Method:

  1. Pressure cook the beetroot for 2 whistles. Let cool and chop.
  2. Heat oil in a kadai.
  3. Splutter mustard seeds and add urad dal.
  4. Add onion when dal turns golden brown.
  5. Saute till it becomes translucent.
  6. Add turmeric powder, red chilli powder, coriander powder and chopped beetroots.
  7. Saute for a couple of minutes and add salt.
  8. Saute for another minute and turn off heat .
  9. Transfer to serving bowl and mix chopped coriander leaves.
