Ingredients:
• This dish could be made with yellow Pumpkin & Prawn, or Brinjal & Prawn
• Ingredients:
• Onions – 2 (big, finely minced)
• 4 – Green chillies (deseeded & finely sliced ) Curry leaves -a sprig
• Mustard Seeds -1 tsp
• Turmeric powder – 1/2 tsp
• Salt – to taste
• Juice of 1 Lime, freshly scraped
• Coconut – 8 tbsp
• Oil- 4 tbsp
• Vegetable -1/2 kg of any of the vegetables mentioned
• Prawns – 3/4 kg
Method:
- Use required quantity of beetroots or pumpkin or brinjals.
- If skin has to be removed remove the same & proceed.
- Clean, wash, cut & keep aside.
- Use small prawns, clean, de-vein, wash well & keep aside.
- Mince onions, green chillies & fry till onions are brown.
- Add mustard seeds, curry leaves & fry till mustard seeds crackle.
- On a Low heat, add the prawns, add salt and turmeric powder.
- Mix well, let it cook; sprinkle a little water if necessary.
- When dry, sprinkle scraped coconut. Mix well & serve.
