Ingredients:

• 2 cups – Curd
• Shoots from about 3 Beets
• 2 tsp – oil
• 1/2 tsp – Mustard Seeds
• 2 – Green chillies
• 3-4 – Curry leaves
• A pinch – Asafoetida
• Salt as per taste

Method:

  1. Wash and chop the shoots finely.
  2. Microwave them with some salt and water for about 4-5 minutes.
  3. Beat curd in a mixing bowl and add the cooked shoots, salt and mix well.
  4. Heat 1-2 tsps oil and temper with mustard seeds, curry leaves, green chillies, asafoetida and add to the raita.
  5. Serve.
