Ingredients:

• 500 gms – small round Brinjals
• Oil for frying
• 1/2 tsp – Turmeric powder
• 2 cm piece Ginger
• 1/2 tsp – Sugar
• Salt to taste
• For grinding:
• 1.5 tsp – coriander powder
• 1 tsp – chilli powder
• 2 Green chillies

Method:

  1. Cut the brinjals into 1 cm. round slices.
  2. Apply the ground masala on both sides and fry in oil to a golden brown.
  3. Serve hot with a little mint chutney on top.
