
Ingredients:
• 250 g – ladies finger
• 1 cup – Coconut
• 2 to 3 tsp – amchur powder
• 1 to 2 tsp – Garam Masala
• 1 to 2 tsp – Red Chilli powder
• 1/2 tsp – Turmeric
• 1/4 cup – chopped Coriander leaves
• 7 to 8 – Curry leaves
• 1/2 tsp – Cumin seeds (jeera)
• salt to taste
• oil
Method:
- For Stuffing: Mix coconut, amchur powder, garam masala, turmeric, red chilli powder and chopped coriander leaves, add a little (1 tsp) oil or water and mix all the ingredients.
- Vertically slit the ladies finger in 4, leaving the 1/2 inch attached at the bottom.
- Fill the ladies finger with the stuffing. Shallow fry with the lid on, over a low flame
- Heat 4-6 tsp oil in a pan, add cumin seeds and curry leaves, place the stuffed ladies finger in it along with the leftover masala.
- Cook with lid on till the ladies finger are cooked.
- Serve with chapattis.
