Ingredients:

• 250 g – ladies finger
• 1 cup – Coconut
• 2 to 3 tsp – amchur powder
• 1 to 2 tsp – Garam Masala
• 1 to 2 tsp – Red Chilli powder
• 1/2 tsp – Turmeric
• 1/4 cup – chopped Coriander leaves
• 7 to 8 – Curry leaves
• 1/2 tsp – Cumin seeds (jeera)
• salt to taste
• oil

Method:

  1. For Stuffing: Mix coconut, amchur powder, garam masala, turmeric, red chilli powder and chopped coriander leaves, add a little (1 tsp) oil or water and mix all the ingredients.
  2. Vertically slit the ladies finger in 4, leaving the 1/2 inch attached at the bottom.
  3. Fill the ladies finger with the stuffing. Shallow fry with the lid on, over a low flame
  4. Heat 4-6 tsp oil in a pan, add cumin seeds and curry leaves, place the stuffed ladies finger in it along with the leftover masala.
  5. Cook with lid on till the ladies finger are cooked.
  6. Serve with chapattis.
