Ingredients:

• 2 cups – Rice
• 4 to 5 tbsp – oil
• 3 big Onions (finely sliced)
• 3 to 4 – Cloves
• 1 Cinnamon stick
• 2 – Bay Leaves
• 4 to 5 – Cardamoms
• 4 cups – water
• salt to taste

Method:

  1. Wash and soak the rice for 20-30 minutes.
  2. Take oil in a heavy bottomed vessel and fry the finely sliced onions on a low flame till they are golden brown in color.
  3. After the onions are done, remove about 2 tbsp of fried onions and keep aside for garnishing.
  4. To the Onions in the vessel, add cloves, cinnamon stick, bay leaves and cardamoms and fry for a minute.
  5. Add the rice, water, and salt to taste.
  6. Give it a boil.
  7. After a boil, reduce the flame.
  8. Cook till the rice is done and the water has been absorbed.
  9. Garnish with the kept aside onions.
  10. Serve hot with any curry or dal.
