Ingredients:

• 3 – long, large Brinjals
• 2 tbsp – Butter
• 1.5 cups – Cream
• 1 cup – soft cooked Corn
• 1 cup – cooked shredded Chicken
• 1/4 cup – Tomato sauce
• Salt and pepper.

Method:

  1. Cut brinjals lengthwise into two. Sprinkle with salt and reserve for 10 mins.
  2. Bake till soft but whole. Remove flesh and cool the brinjal skin.
  3. Mix flesh with cream, chicken, corn, salt and pepper.
  4. Pile them over the six halves of brinjals.
  5. Dot with sauce and serve cold.
