
Ingredients:
• 3 – long, large Brinjals
• 2 tbsp – Butter
• 1.5 cups – Cream
• 1 cup – soft cooked Corn
• 1 cup – cooked shredded Chicken
• 1/4 cup – Tomato sauce
• Salt and pepper.
Method:
- Cut brinjals lengthwise into two. Sprinkle with salt and reserve for 10 mins.
- Bake till soft but whole. Remove flesh and cool the brinjal skin.
- Mix flesh with cream, chicken, corn, salt and pepper.
- Pile them over the six halves of brinjals.
- Dot with sauce and serve cold.
