
Ingredients:
• 2- Bitter gourd
• 1 cup- Fresh sweet Curd
• 1/4 cup – Grated Coconut (ground into a paste)
• 2 tbsp – Lemon Juice
• 1 tbsp – Salt
• 1/2 tsp – Sugar
• Salt as per taste
• For seasoning:
• 1 tsp – Urad Dal
• 1/2 tsp – Mustard Seeds
• 1/4 tsp – Hing
• 1-2- Red Chillies (as per your taste)
• Curry leaves – 2-3
• Fresh coriander leaves, chopped finely 1-2 tbsp
• Oil
Method:
- Slice the bitter gourd into small pieces and soak in lemon juice and salt for 1 hour.
- Wash well and squeeze out the water.
- Saute with oil in a non-stick pan until crisp.
- Remove and drain on tissue paper.
- Add coconut paste to the yoghurt and beat until smooth.
- Mix the bitter gourd slices.
- Heat oil and season with all the ingredients.
- Pour seasoning into the curd along with sugar and salt.
- Keep in the fridge.
- Serve chilled with rice.
