
Ingredients:
• 1/3 cup – Jaggery powder
• 1/2 cup – Apple juice (no added sugar)
• 1/3 cup – Butter
• 1 cup – mixed dry fruits
• 1/4 cup – chopped candied peel
• 1/2 tsp – soda
• 2 tbsp – brandy, rum or tea decoction
• 1 cup – flour (maida)
• 1/2 tsp – baking powder
• 1 Egg
• blanched Almonds for topping
Method:
- Dissolve jaggery in apple juice.
- Strain, add butter, fruits and peel. Boil gently for 5 minutes.
- When it is slightly cooled, add soda, brandy/rum/tea and spice powder. Allow to cool completely.
- Mix flour with baking powder. Beat the egg.
- Add these to the cooled fruit mixture. Mix well (Avoid over beating).
- Pour in a prepared 61/2 round or square tin.
- Arrange blanched almonds on top. Bake at 180 degrees centigrade till done. ( About 1/2 Hr. )
