Ingredients:

• 1 cup – basmati Rice (could use brown Rice or brown basmati)
• 1 tbsp – Olive oil
• 2 Cloves – Garlic (finely minced)
• 3 – baby Bok Choy
• 1 medium size – Orange bell pepper (cut in thin strips)
• 1/2 cup – Green peas (fresh or frozen)
• 3 – scallions (thinly sliced)
• 2 tsp – grated Ginger
• 2 tsp – sesame oil (I used dark)
• 3 tbsp – reduced sodium soy sauce
• 1 tsp – crushed red peppers

Method:

  1. Cook the rice following directions based on what kind of rice you are using.
  2. Spread it on a wide plate and let it cool down. Heat the oil in a frying pan.
  3. Add the minced garlic, chopped bok choy and sliced bell pepper and saute on medium high heat for about 6-8 mins.
  4. Now add the peas and scallions and stir fry for 4 more minutes.
  5. Add the sesame oil, crushed red peppers and the soy sauce. Stir well to combine.
  6. Add the cooked rice and continue to cook the mixture for 2 to 3 more minutes, stirring frequently.
  7. At this point check for seasoning and add more soy sauce or pepper if needed.
