Ingredients:
• 1 – medium sized Bottle Gourd (diced into small cubes)
• 1 tsp – mustard
• 1 tsp – Urad Dal
• 1 tsp – Chana dal
• 1 – Red Chilli
• 1 tsp – Cumin seeds
• 1 tsp – Turmeric powder
• 2 tsp – – sabji masala powder
• 1 tbsp – Jaggery
• 3 tbsp – Sunflower oil
• chopped Coriander leaves – for flavour
• chopped Curry leaves – for flavour
• chilli powder (if desired)
• Asafoetida (if desired)
• salt to taste
Method:
- Heat oil in a pan, add mustard, urad dal, chana dal, red chillies, cumin seeds.
- Saute till they splutter and then add turmeric powder, sabji masala powder, curry leaves.
- Blend this seasoning well and then add the cut bottle gourd.
- Fry the vegetable in the oil until it is cooked and the ingredients have bound together.
- Finally, add jaggery and salt.
- Bottle gourd gets soft and tender after it is cooked.
- Garnish with coriander leaves and serve hot with roti/naan.
