
Ingredients:
• 1/2 lbs – Bread
• 1 cup – chopped Cauliflower
• 1/3 cup – Green peas
• 1 small – capsicum, grated
• 1 – medium-sized tomato, chopped
• 1 – small onion, grated
• 1/2 – carrot, cut into small pieces
• 5 gms – Cashew nuts and Raisins
• 1 tsp – Ghee (clarified butter)
• Coriander leaves, for garnishing
• 2 tsp – Sugar
• Salt to taste
Method:
- Crush the bread manually, using a little water to make it soft. Set aside.
- Heat oil in pan and put in the cauliflower, carrot and capsicum. Cook until soft.
- Add the onions and tomatoes. Take care they do not brown or burn. Add the bread,cashew nuts, raisins, sugar and a pinch of salt.
- Mix with a spatula. You can add a little ghee (1 tsp), for flavor.
- Remove onto a serving plate and decorate with fresh coriander leaves.
