Ingredients:

• 1 tbsp – margarine or Butter
• 1 – medium potato, cooked and diced
• 4 – eggs, beaten
• 4 – bacon slices, cooked and crumbled
• 4 (8-inch) – flour tortillas
• 3/4 cup – shredded cheddar cheese
• 1/2 cup – picante sauce or thick and chunky salsa

Method:

  1. In a medium skillet, heat margarine over medium heat.
  2. Add potato and cook until lightly brown.
  3. Add eggs and bacon.
  4. Cook until eggs are set but still moist.
  5. Warm tortillas according to package directions.
  6. Spoon about 1/2 cup of the potato mixture into the centre of each tortilla.
  7. Top with cheese and picante sauce. Roll up.
