Ingredients:
• Tamarind – size of a Lime
• 500gm Brinjal
• 5 tbsp – Mustard oil
• 1 tsp – Mustard Seeds
• 1/2 tsp – Turmeric powder
• 1 tsp – chilli powder
• salt to taste
• Raisins – 2 tbsp
• Sugar – 1 tsp
• 1/2 cup – tomato, blanched, peeled, and diced
Method:
- Soak tamarind in 1/2 cup of water and extract the juice. Keep aside.
- Cut brinjal into small pieces.
- Heat oil in a kadai and add mustard seeds.
- When they splutter, add brinjal and turmeric.
- Fry till brinjal is well-browned.
- Add chilli powder, salt, raisins, sugar, tomatoes, and tamarind juice.
- Simmer till the brinjal is cooked and the gravy is thick.
