
Ingredients:
• 1 – Large black Brinjal
• 1 – Small onion, minced
• 1/2 inch piece ginger, minced
• 3 – Green chillies
• Handful of Coriander leaves
• 1/4 tsp – Turmeric powder
• 1 tsp – Coriander powder
• Salt and chilli powder to taste
• 2 tbsps – Ground Coconut
• 50 gms – Tomatoes, peeled and pureed
Method:
- Grill the brinjal over an open flame till the skin turns black and the brinjal turns soft.
- Peel and mash to a smooth paste.
- Put the rest of the ingredients in a pan and cook till the mixture turns thick.
- Put in the brinjal mix well and serve hot.
