Ingredients:
• 1 – big Brinjal
• 3 – green chillies, chopped
• Salt to taste
• 1 tsp – Mustard Seeds
• 1 tsp – oil
• 1 tsp – Urad Dal
• 1 tsp – Channa dal
• Coriander leaves – 1/4 bunch
• Curry leaves – 2 sprigs
• 4 cup – yogurt or thick Curd
Method:
- Apply oil on brinjal and bake at 350 degrees in an oven for about 20 minutes
- Keep the brinjal in the oven for some more time if it’s not soft enough to peel the skin
- Heat oil in a pan and splutter the mustard seeds.
- Now add urad dal, channa dal, green chillies and curry leaves.
- Fry till the dal turns brown
- Remove the pan from the flame and transfer the mixture to a vessel
- Add yogurt and salt
- Peel the skin of the brinjal and add the brinjal to the mixture in the vessel and mix well
- Add the coriander leaves
- Serve with rice
