Ingredients:

• 1 whole Chicken
• 1/2 tsp – salt
• 2 tbsp – oil
• 1 onion, thinly sliced
• 1/4 tsp – freshly ground black pepper
• 1 tbsp – crushed Garlic
• 1/2 tbsp – Tomato puree
• 1/2 tsp – Garam Masala
• 1 tsp – curry powder
• 1/4 tsp – salt
• 4 tbsp – water

Method:

  1. Preheat oven to 180 C.
  2. Place the chicken in a covered baking dish or casserole with 1/2 tsp salt and olive oil.
  3. Bake in the preheated oven for 40 minutes or until chicken is cooked through.
  4. Add the onion, pepper, garlic, tomato puree, garam masala, curry powder and 1/4 tsp salt.
  5. Mix all together, then add water for the ingredients to cook.
  6. Return to the oven for 5 more minutes to blend all the flavours.
  7. Serve with rice, naan or roti.
