Ingredients:

• 1.5 cups – Refined flour or Maida
• 60 gms – Mixed candied peels, finely sliced
• 5 – eggs
• 2 tsps – Water
• 1 tsp – Essence of Orange or any other essence of your choice
• 1 cup – Sugar
• 2 tsps – Shajeera
• 1/2 cup – Sugar (extra)

Method:

  1. Beat the eggs in a bowl and mix in water, essence, 1 cup sugar and shahjeera.
  2. Place the bowl over hot water and continue beating till thick.
  3. Mix the flour with grated peel and egg mixture thoroughly.
  4. Grease a cake tin lightly and dust with flour.
  5. Fold in the batter.
  6. Sprinkle the remaining sugar on top and bake in a preheated moderate oven for 1/4ths of an hour, or till a knife inserted in the centre comes out clean.
