Ingredients:
• 2 – green capsicums, medium
• 2 – onions, medium, cut into fine pieces
• 1 tbsp – chopped Coriander leaves
• 3/4 cup – Peanut
• 6 – Red Chillies
• 1/2 tbsp – Coriander seeds
• 4 tbsp – oil
• Salt to taste
Method:
- Cut the capsicum into medium sized pieces.
- Saute peanut, red chillies, half of the chopped onions and coriander seeds in a pan and then grind to a thick paste.
- Heat oil in a pan and add the remaining chopped onions. Fry till golden brown.
- Add capsicum and salt. Cook on low flame for 10 minutes
- Add peanut paste and cook it for 5 minutes
- Garnish with coriander leaves. Serve with rice or roti.
