Ingredients:

• 3/4 cup – white Sugar
• 2 – Egg yolks
• 6 – Egg whites
• 1.75 cups – water
• 1 tin – low-fat sweetened condensed Milk
• 1/2 tsp – vanilla extract
• 1 pinch – salt

Method:

  1. Preheat an oven to 350 degrees F.
  2. In a heavy skillet over medium-low heat, cook and stir the sugar until it melts and is light brown.
  3. Pour the sugar into a 9-inch round baking dish carefully, tilting the dish to coat the bottom completely.
  4. In a medium-sized bowl, beat the egg yolks and whites. Stir in water, condensed milk, vanilla and salt until smooth.
  5. Pour the egg mixture into the prepared dish. Line a roasting pan with a damp kitchen towel.
  6. Place the baking dish on the towel inside the roasting pan. Now place the roasting pan on the oven rack.
  7. Fill the roasting pan with boiling water to reach halfway up the sides of the baking dish.
  8. Bake in the preheated oven for an hour, until the centre is just set (still a bit jiggly).
  9. Remove the dish to a wire rack to cool for an hour, then refrigerate for several hours or overnight.
  10. To unmold, run a knife around the edge of the pan and invert onto a rimmed serving platter.
