Ingredients:
• 3/4 cup – white Sugar
• 2 – Egg yolks
• 6 – Egg whites
• 1.75 cups – water
• 1 tin – low-fat sweetened condensed Milk
• 1/2 tsp – vanilla extract
• 1 pinch – salt
Method:
- Preheat an oven to 350 degrees F.
- In a heavy skillet over medium-low heat, cook and stir the sugar until it melts and is light brown.
- Pour the sugar into a 9-inch round baking dish carefully, tilting the dish to coat the bottom completely.
- In a medium-sized bowl, beat the egg yolks and whites. Stir in water, condensed milk, vanilla and salt until smooth.
- Pour the egg mixture into the prepared dish. Line a roasting pan with a damp kitchen towel.
- Place the baking dish on the towel inside the roasting pan. Now place the roasting pan on the oven rack.
- Fill the roasting pan with boiling water to reach halfway up the sides of the baking dish.
- Bake in the preheated oven for an hour, until the centre is just set (still a bit jiggly).
- Remove the dish to a wire rack to cool for an hour, then refrigerate for several hours or overnight.
- To unmold, run a knife around the edge of the pan and invert onto a rimmed serving platter.
