Ingredients:
• 1 cup – basmati Rice
• 4 cup – Milk
• 2 tbsp – Raisins
• 2 tbsp – walnuts, chopped
• 2 tbsp – almonds, peeled and chopped
• 1 tsp – vanilla essence
• 1 cup – Sugar
• 2 cup – fresh yogurt
Method:
- Wash the rice, add milk and cook till the rice is very soft and most of the milk is absorbed.
- Stir in the raisins, nuts and essence.
- Place the sugar in a thick bottomed pan. Sprinkle with 2-3 Tbsp of water.
- Place on a mode flame and cook without stirring till the sugar melts and turns a rich brown caramel.
- Remove from fire. Add ¼ cup of very hot water and stir to dissolve the caramel. It will be like a thick sauce.
- Add the caramel sauce to rice. Cool and place in refrigerator.
- Beat the yogurt till smooth and add to the chilled rice mixture. Serve chilled.
