
Ingredients:
• 2 – large eggs
• 350 gm – carrot, peeled and grated
• 250 gm – white bread crumbs
• 150 ml – Milk
• 125 gm – margarine
• 125 gm – soft Brown sugar
• 100 gm – dates, copped finely
• 100 gm – Raisins
• 50 gm – preserved peel, chopped finely
• 1 tsp – mixed spice powder
Method:
- Mix together all the ingredients from carrots to spice powder.
- Add lightly beaten eggs and milk and stir till uniformly mixed.
- Place the mixture in a greased pudding mould, preferable with a well-fitting lid.
- Cover with double layer of aluminium foil and seal it well.
- Pour about 2 cups of water in a pressure cooker.
- Place the pudding mould in it.
- Pressure cook for 1 hour.
- Cool the cooker for 15-20 minutes and open.
- Lift out the mould.
- Cool slightly and place it on a serving plate.
- Serve warm with custard.
