
Ingredients:
• 1 Onion
• 3 Carrots
• 1 stick of Celery
• 1 cup Chicken stock
• 1 – cup Orange juice (fresh or packet)
• 1 – tbsp Butter
• Salt
• Pepper
Method:
- Chop the onions and saute in butter till soft. Add sliced carrots and chopped celery and saute further for 5 minutes.
- Add salt and pepper.
- Lower the flame and let it cook for 5 minutes. Add the chicken stalk and 1 cup water and cook till carrots are done.
- Strain and puree the remaining carrots and onions in blender. Add to The liquid.
- Add 1 cup orange juice, garnish with sprig of parsley. Serve either hot or chilled.
