Ingredients:

• Tomato – 1 cup, chopped
• Carrot – 1 cup, grated
• water, vegetable or Chicken stock 1 liter
• Butter – 2 tbsp
• Cumin seeds -1/2 tsp
• Coriander seeds – 1/2 tsp
• black pepper Corns -1/2 tsp
• Cinnamon – 1 small piece
• Onion – 1/2 cup, chopped
• Garlic – 1 tsp, chopped
• Lime juice – 1 tbsp
• Coriander leaves to garnish
• salt to taste

Method:

  1. Melt butter in a pan.
  2. Add cumin, coriander, pepper and cinnamon.
  3. Fry till fragrant.
  4. Add onion and garlic and fry till onion is light brown.
  5. Add tomato and water or stock.
  6. Simmer till tomato is very soft, about 20 minutes.
  7. Cool and blend in a mixer and strain.
  8. Add carrot and salt to the liquid and simmer for 5 minutes.
  9. Remove from fire, stir in the lime juice.
  10. Serve hot garnished with coriander leaves.
