Ingredients:
• Tomato – 1 cup, chopped
• Carrot – 1 cup, grated
• water, vegetable or Chicken stock 1 liter
• Butter – 2 tbsp
• Cumin seeds -1/2 tsp
• Coriander seeds – 1/2 tsp
• black pepper Corns -1/2 tsp
• Cinnamon – 1 small piece
• Onion – 1/2 cup, chopped
• Garlic – 1 tsp, chopped
• Lime juice – 1 tbsp
• Coriander leaves to garnish
• salt to taste
Method:
- Melt butter in a pan.
- Add cumin, coriander, pepper and cinnamon.
- Fry till fragrant.
- Add onion and garlic and fry till onion is light brown.
- Add tomato and water or stock.
- Simmer till tomato is very soft, about 20 minutes.
- Cool and blend in a mixer and strain.
- Add carrot and salt to the liquid and simmer for 5 minutes.
- Remove from fire, stir in the lime juice.
- Serve hot garnished with coriander leaves.
