Ingredients:
• 4 – Carrots
• 1 medium sized – onion, chopped fine
• 1 tbsp – Coconut
• To temper:
• 1 tsp – oil
• 1 tsp – Mustard Seeds
• 1/2 tsp – Urad Dal
• a few – Curry leaves
• 1 – green chilli, slit into half
Method:
- Wash carrots, peel and grate them. Keep aside.
- Heat oil in a kadai, add mustard seeds and let it splutter. Add urad dal and curry leaves, and fry for a min.
- Now add green chillies and saute for 2 mins.
- Now add onion and saute well till it turns soft.
- Add coconut and saute well till it turns light brown.
- Finally add carrot and mix it well, add salt.
- Saute till everything is mixed well and the raw smell of carrot is gone.
- Serve with sambar rice or any variety rice.
