Ingredients:

• 5 to 6 – fresh carrots, peeled
• 1/2 – apple, peeled
• 1/2 – Tomato
• 1 tsp – Lemon juice
• 1 stalk – Lemon grass
• 1 sprig – Mint leaves, finely chopped
• 1 tbsp – Basil leaves, finely chopped
• 1/4 tsp – ginger, crushed
• 2 tbsp – Sugar
• 1/2 tsp – salt

Method:

  1. Wash and halve carrots. Put in a microwave-proof bowl.
  2. Add lemon grass stalk, roughly chopped.
  3. Add tomato and apple and microwave them for 1 minute on high.
  4. Remove, cover, and allow it to cool at room temperature.
  5. Refrigerate for some time or till required.
  6. Run this mixture in an electric blender till very smooth.
  7. Add 800ml chilled water, lemon juice, sugar, and salt.
  8. Strain with a plastic strainer and chill.
  9. Put ginger in a muslin cloth and twist into a pouch.
  10. Rub this into a small bowl with 20ml water.
  11. Squeeze this ginger concentrate into juice.
  12. Add other herbs and run again in mixer till herbs are crushed.
  13. Pour into glasses and serve chilled.
  14. Best served fresh.
