
Ingredients:
• 5 to 6 – fresh carrots, peeled
• 1/2 – apple, peeled
• 1/2 – Tomato
• 1 tsp – Lemon juice
• 1 stalk – Lemon grass
• 1 sprig – Mint leaves, finely chopped
• 1 tbsp – Basil leaves, finely chopped
• 1/4 tsp – ginger, crushed
• 2 tbsp – Sugar
• 1/2 tsp – salt
Method:
- Wash and halve carrots. Put in a microwave-proof bowl.
- Add lemon grass stalk, roughly chopped.
- Add tomato and apple and microwave them for 1 minute on high.
- Remove, cover, and allow it to cool at room temperature.
- Refrigerate for some time or till required.
- Run this mixture in an electric blender till very smooth.
- Add 800ml chilled water, lemon juice, sugar, and salt.
- Strain with a plastic strainer and chill.
- Put ginger in a muslin cloth and twist into a pouch.
- Rub this into a small bowl with 20ml water.
- Squeeze this ginger concentrate into juice.
- Add other herbs and run again in mixer till herbs are crushed.
- Pour into glasses and serve chilled.
- Best served fresh.
