
Ingredients:
• 2 – Chayote squash, de-skinned and cut into small cubes
• 1 – onion, chopped finely
• 1 tsp – oil
• 1 tsp – Turmeric powder
• 1 tsp – Cumin seeds for tempering
• 1 tsp – salt to taste
• To grind into dry masala: 3 tbsp – fresh grated Coconut
• 3 – green chilles
• 1 tsp – Cumin seeds
• 4 sprigs – Coriander leaves
Method:
- Heat oil in a pan. Add the cumin seeds and let them splutter.
- Add turmeric and onion and saute until it becomes dark pink or light brown.
- Add the cubed vegetables and salt. Cover and cook until done.
- Add the dry masala, turn off the heat and cover the pan.
