Ingredients:
• 1 kg – Potatoes
• 200 g – Onions
• 200 g – cheese
• 150 ml – Cream
• 50 g – breadcrumbs
• 1 tbsp – Butter
• salt and pepper as per taste
• a few fresh chopped Coriander leaves for garnishing
Method:
- Turn the oven on full.
- Wash the potatoes well and slice thinly.
- Peel and thinly slice the onions.
- Add the potatoes and onions into the boiling water. Boil for 5-7 minutes, checking from time to time if the water has evaporated.
- In the meantime, grate the cheese, prepare the breadcrumbs and chop the coriander leaves.
- Butter a heat-proof casserole and place a layer of grated cheese at the bottom.
- Cover this with a layer of drained potatoes and onions and pepper. Add salt as per taste.
- Repeat this until all the potatoes are used, finishing with a layer of cheese.
- Pour the cream over the top, cover with the breadcrumbs, dot with butter, and cook for at least 15 minutes.
- Sprinkle chopped coriander and serve.
