Ingredients:
• 3 slices bread, sides trimmed
• 3 tsp – Butter
• 1/4 cup – ricotta or Cream cheese
• 1/4 cup – grated Carrot
• 1/2 cup – grated cheddar cheese
• 1 tbsp – finely chopped Parsley
• 2 tbsp – Pecan nuts, finely chopped
• black pepper
Method:
- Flatten bread slightly with rolling pin and spread butter on the slices.
- Combine all remaining ingredients in a bowl and spread on the bread leaving the edges.
- Roll up tightly.
- Cut at an angle into 2 or 3 pieces each, trimming the ends.
- Cover and refrigerate until required to serve.
