
Ingredients:
• 2 cups – graham cracker crumbs
• 1/3 cup – Sugar
• 1/2 tsp – ground Cinnamon
• 1.5 cups – Butter or margarine, melted
• For the Filling:
• 250 gms – packaged Cream cheese, softened
• 1.5 cups – Sugar
• 1 tsp – vanilla extract
• 4 eggs, separated
• fresh fruit
Method:
- In a small bowl combine the cracker crumbs, sugar and cinnamon. Stir in the butter.
- Press into a greased 15 inch X 10 inch X 1 inch baking pan.
- Bake at 350 degrees F for five minutes.
- In a large mixing bowl beat the cream cheese, sugar and vanilla until smooth.
- Add egg yolks and beat at a slow speed until combined.
- In a small mixing bowl, beat egg whites until soft peaks form.
- Fold beaten egg whites into cream cheese mixture.
- Pour over the baked crust.
- Bake for 28-39 minutes or until center is almost set.
- Cool on a wire rack for 30 minutes.
- Refrigerate overnight.
- Garnish with fruit.
