Ingredients:

• 2 tbsp Butter
• 1 tbsp Garlic minced
• 1 onion, thinly sliced
• 1/2 tsp chilli powder
• 2 stalks celery, chopped
• 1/2 kg tomatoes, blanched peeled and chopped
• 2 tbsp Tomato ketchup
• salt & pepper to taste
• 1 tsp Sugar
• 6 eggs
• 100g grated cheddar cheese

Method:

  1. Melt butter in a large, heavy fry pan.
  2. Add garlic, fry till well browned.
  3. Add onion and cook over medium heat till soft but not brown.
  4. Stir in chilli powder, celery, tomatoes and ketchup, salt and pepper and sugar.
  5. Simmer for 15 minutes.
  6. Make six dents in this mixture.
  7. Break eggs one at a time on a saucer and gently slide in the dents.
  8. Cover and simmer till the eggs get soft.
  9. Top each egg with grated cheese, cover and simmer for 2 more minutes or till the cheese melts.
