Ingredients:

  1. Pasta – 1 cup (100 grams)
  2. Milk – 1 cup
  3. Capsicum – 1
  4. Mozzarella cheese – 1/4 cup (40 grams) (grated)
  5. Butter – 2 tbsp
  6. Refined flour – 1 tbsp
  7. Oil – 2 tsp
  8. Black pepper – 5 to 6 (coarsely ground)
  9. Oregano – 1/4 tsp
  10. Salt – 3/4 tsp or to taste

 How to make?

For boiling the pasta, pour 3 cups of water in a vessel (keep the quantity more so that the pasta is submerged completely). To the water add 1/2 tsp salt and put the lid on so that the water starts boiling quickly.

When the water starts boiling, drop the pasta to it, followed by 2 tsp oil. Now let the pasta cook on medium flame until it gets tender. Stir the pasta after every 2 minutes.

Press the pasta to check if its soft or not. Pasta has turned tender is ready to use (it takes 8 to 10 minutes for cooking the pasta). Turn off the flame. Transfer the boiled pasta to a sieve to remove the excess water. Let the pasta cool down a little.

Rinse the capsicums and remove the seeds from it. Now thinly slice the capsicum.

Heat 1 tbsp butter in a wok or pan and let it melt. When the butter melts, add chopped capsicums to it and saute on high flame while stirring constantly. Saute capsicum for 1 to 1.5 minutes then transfer it to a plate.

Add the remaining butter to the pan. When it melts, add refined flour to it and roast it on low flame while stirring constantly. Saute the refined flour for a minute until there is slight change in the color.

Now mix milk to it. Constantly stir them together to prevent any formation of the lumps. Stir constantly and let it cook until it starts simmering.

White sauce is now done and turned thick in consistency. Now add cheese to it and mix well, followed by 1/4 tsp salt and coarsely ground black pepper. Also add boiled pasta and roasted capsicum to it. Now mix everything really well. Mix some oregano to the pasta and mix well.

Cheese pasta is ready, turn off the flame and transfer it to another bowl. Garnish the steaming hot cheese pasta with some oregano and relish eating.
