Ingredients:

• 8 boneless Chicken breasts
• For marinade:
• 6 Cloves garlic, coarsely chopped
• 1 tsp – ground cumin
• 1 tsp – dried Oregano
• 1 tsp – dried Thyme
• 2 tbsp – coriander, finely chopped
• 2 tbsp – parsley, finely chopped
• 6 tbsp – sour Cabbage juice/lime juice
• 4 tbsp – Olive oil
• pepper as required
• salt to taste

Method:

  1. Remove all skin and fat from the chicken breasts.
  2. Make 1 cm deep gashes on the side of all pieces with a sharp knife.
  3. Pat dry with paper.
  4. Mash garlic with shallot and herbs in a mortar and pestle.
  5. Work in remaining ingredients for marinade (alternatively blend these together to save time).
  6. Transfer the marinade to a non-reactive bowl and cover.
  7. Leave in the refrigerator for at least 2 hours.
  8. Preheat the grill. Cook breasts for about 3-4 minutes on each side.
  9. Serve with a small helping of the mango salsa.
